Leftover Kimchi: Choose by Type, Amount, and Rice
Compare fried rice, a kimchi side dish, white kimchi tofu stew, and young radish stew by grams, extra ingredients, servings, and cooking time.
Check the kimchi type before choosing a dish
A jar of cabbage kimchi, white kimchi, and young radish kimchi are different starting points. Read the jar label before choosing from the recipes below. White kimchi and chonggak kimchi each have a dedicated stew here; do not assume the same ingredients or cooking time apply to all three.
A rice meal: 150 g kimchi, plus cooked rice
Kimchi fried rice serves two and lists 10 minutes of prep plus 10 minutes of cooking. It needs 150 g aged kimchi, 2 tablespoons kimchi juice, two bowls of cooked rice, 100 g ground pork, and two eggs. Check for gochujang and sesame oil as well as the other listed ingredients. Rice cooking is separate, and the instructions use another pan for the eggs.
A side dish: 350 g kimchi, without meat in the recipe
Stir-fried kimchi uses 350 g aged kimchi and 80 g onion for four side-dish servings, with 8 minutes of prep and 10 minutes of cooking. The list calls for cooking oil, chili flakes, sugar, garlic, sesame oil, and sesame seeds. There is no meat ingredient in this recipe, but that does not establish the ingredients of the kimchi in the jar.
Serve it alongside rice or ramyeon. Four servings means a shared side, not four complete dinners. Leave some brine in the chopped kimchi, then cook off pooled moisture over medium heat until the sauce clings.
White kimchi: check the stock and chili
White kimchi tofu stew uses 220 g white kimchi for two servings, with 8 minutes of prep and 15 minutes of cooking. It also needs 250 g firm tofu, 100 g enoki, and 700 ml anchovy-kelp stock. The recipe includes green chili and soup soy sauce. A clear broth is not a promise of a chili-free or fish-free dish. Have the stock ready before using the listed 23 minutes to plan dinner.
Young radish kimchi: reserve 40 minutes
Young radish kimchi stew uses 220 g chonggak kimchi, including the radish bulbs and greens, plus 120 ml kimchi brine. It serves two and lists 12 minutes of prep plus 28 minutes of cooking. The other main ingredients include 180 g pork shoulder, 180 g tofu, and gochugaru. This is a longer simmer than the white kimchi stew. Neither stew includes rice as an ingredient; prepare rice separately if serving it alongside.
Use the sugar amount for the chosen recipe
The stir-fried kimchi recipe uses 1 teaspoon sugar for 350 g kimchi. The fried rice uses 0.5 teaspoon sugar for 150 g kimchi and two bowls of rice. The radish stew lists no sugar and simmers the kimchi with its brine. These are recipe-specific quantities, not a rule to sweeten every sour kimchi dish. All times here are listed prep plus cooking time, not a timed test of a complete meal.
300 g kimchi plus pork and tofu
Kimchi jjigae makes four servings with 300 g kimchi, 200 g pork belly, one block of tofu, and 800 ml water. Check for both doenjang and gochugaru. The method also uses kimchi brine and soup soy sauce, so read the steps as well as the ingredient list before shopping.
Cook the pork and kimchi in the pot first, then add the seasonings and water. Tofu goes in after the broth has simmered. Plan rice separately if serving the stew as the main meal.
