Spicy Korean Food: Choose by Ingredients and Equipment

These three recipes each serve two, but they need different seasonings and equipment. Check the full ingredient list before starting. The quantities below describe the linked recipes; they are not a ranking of how hot the finished dishes taste.

Cooked rice and gochujang: kimchi fried rice

Kimchi fried rice starts with two bowls of cooked rice, 150 g aged kimchi, 100 g ground pork, and 2 tablespoons of kimchi juice. Its chili paste is 0.5 tablespoon gochujang; the ingredient list does not call for gochugaru. Keep the kimchi juice when chopping the kimchi.

The recipe lists 10 minutes of prep and 10 minutes of cooking. Rice cooking is separate because cooked rice is an ingredient. You need a frying pan and spatula, plus a second pan for the two fried eggs in the final step. With one pan, cook in sequence and allow more time.

Gochugaru and soup soy sauce: pork kimchi stew

Pork kimchi stew uses 250 g aged kimchi, 220 g pork shoulder, 180 g tofu, and 800 ml water. The seasoning is 1 tablespoon each of gochugaru, minced garlic, and soup soy sauce. This version does not list gochujang, so a jar of chili paste alone does not complete its seasoning list.

Use a pot for frying the pork and kimchi, then simmering the broth. It lists 12 minutes of prep and 25 minutes of cooking. Cut the tofu, onion, and green onion before heating the pot so they are ready for their later steps. Rice is not included in this recipe; plan it separately if you want it alongside the stew.

Chicken, rice cakes, and a wide lidded pan: dakgalbi

Dakgalbi uses 400 g chicken thigh, 200 g cabbage, one sweet potato, and 100 g rice cakes. Check for both gochujang and gochugaru, plus soy sauce, sugar, minced garlic, and curry powder. Having chicken and chili paste alone is not enough for this version.

The instructions call for a wide pan with a lid: sweet potato goes on the bottom, followed by cabbage and marinated chicken. Rice cakes and green onion go in later. Cut the sweet potato to the listed 0.5 cm thickness before assembling the pan.

Leave room for the dakgalbi marinade

Dakgalbi lists 20 minutes of prep and 20 minutes of cooking, but its instructions also require 15 to 30 minutes of marinating. The recipe does not establish whether the full waiting period is included in that prep time. Allow for the marinade in your schedule rather than treating 40 minutes as a guaranteed start-to-finish time. These are recipe timings, not independently timed cooking tests.

Frequently asked questions

Do all three recipes need both gochujang and gochugaru?

No. The fried rice lists gochujang without gochugaru. The pork kimchi stew lists gochugaru without gochujang and also needs soup soy sauce. Dakgalbi lists both chili seasonings. Use the ingredient list for the specific recipe rather than treating the two seasonings as interchangeable.

Are these recipes meat-free?

No. These versions use ground pork in the fried rice, pork shoulder in the stew, and chicken thigh in dakgalbi. Their names alone do not identify a meat-free recipe.
